INGREDIENTS:
- 2 tablespoons olive oil
- 1 chopped onion
- 2 cloves garlic, crushed
- 1 cup boiling water
- 1/2 cup crushed tomatoes
- 2 tablespoons tomato paste
- 1 16-ounce can red kidney beans, drained
- 1/2 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
METHOD:
- Add oil in a pan, once hot, add onion and garlic. Saute till golden.
- Add water, crushed tomatoes and tomato paste to above, cook for around 2 minutes.
- Mash 1 cup of the beans, leaving 1 cup of whole beans, add both cups to the pan one by one.
- Add all spices, cook on low flame for 30 minutes; stir every so often.
- Serve hot.
