Bean Chili - VEG

Serving: 4
Cook Time: 40-45 minutes

INGREDIENTS:


  • 2 tablespoons olive oil


  • 1 chopped onion


  • 2 cloves garlic, crushed


  • 1 cup boiling water


  • 1/2 cup crushed tomatoes


  • 2 tablespoons tomato paste


  • 1 16-ounce can red kidney beans, drained


  • 1/2 teaspoon oregano


  • 1 teaspoon salt


  • 1/2 teaspoon cumin


  • 1/2 teaspoon chili powder


METHOD:




  1. Add oil in a pan, once hot, add onion and garlic. Saute till golden.


  2. Add water, crushed tomatoes and tomato paste to above, cook for around 2 minutes.


  3. Mash 1 cup of the beans, leaving 1 cup of whole beans, add both cups to the pan one by one.


  4. Add all spices, cook on low flame for 30 minutes; stir every so often.


  5. Serve hot.
